Dai, questo e' facile e lo trovi sui manuali di LaTeX... ad esempio

Cmq: \`{e} -> è
\'{e} -> é
\"{u} -> ue tedesco (u con umlaut)
\c{c} -> ç
... insomma, c'e' una logica... :-))
