Usa babel, un package di LateX.
Se usi LaTex 2.09 i comandi da mettere nel preambolo sono:
\documentstyle[italian]{...}

mentre com LaTeX2e sono:
\documentclass{...}
\usepackage[italian]{babel}

Trovi tutte le informazioni in:
/usr/share/doc/tetex-doc/texmf/generic/babel/
