If you have some "extra" modules loaded (like snd_* etc.. ) it doesn't mean that after unloading/blacklisting theese modules your kernel will be _much_ better/secure. As Craig said ,stock kernels are good for installation only - but only assuming that you use your debian on server (not on on desktop - imagine all those people with soundcards yelling "omg omg.. where's my sound ?" ;/ ) Moreover , assuming that you have your debian on server machine - IMHO there's no other way to use it in production than compiling a monolitic/your own kernel.
