Others will probably give better ideas, but syslog-ng + stunnel is a
decent approach. It works for me, but YMMV.

For windows boxes, you can use ntsyslog to send events to the log
machine. Don't forget about security, though. Maybe you can use
stunnel for Windows.

For the analysis, I'd write a few scripts, probably in perl.
