deb http://www.backports.org/debian stable postfix

The above is one of many sources.list entries that will give you Postfix 2.1 
on woody.

Postgrey build-depends on libberkeleydb-perl (>= 0.25-1), so if 
libberkeleydb-perl is back-ported then it should be really easy to back-port 
postgrey...
