This dollar sign looks wrong.

Try it without the dollar sign prefixes; that is, 

DEFAULT=/var/spool/courier/user/$LOGNAME/Maildir
HOME=/var/spool/courier/user/$LOGNAME
MAILBOX=$HOME/Maildir
INCLUDE=$MAILBOX

If that doesn't work, I'm sure someone over at courier-users or on #courier 
can help you.  I only have experience using all the courier tools 
together.
