default route [linux/network]

hi all, to make it short:
can someone tell me why there are default routes and how to set them?
lets imagine we got this network

| box 1 |
- ------
eth0 ---------- local lan1 with 192.168.1.0/24
eth1 ------------------- internet
eth2 ---------- local lan1 with 192.168.1.0/24
what to set the default gw? i would like to route packages with masq from the
subnets (lan)
