I thought that some flexible table based fully custom input may be available using
either ibus-table or ibus-m18n with some user data. (This is my vague idea without
proof.)
Then looking at Debian repository, I found ibus-keyman package which supports over
2000 data from https://keyman.com/ (SIL) using and keyman package.
This looks interesting for Greek/German like combination. (Not for "Full Japanese
input with Kanji" ... just hiragana-only)
