You can do this in gdm using the Session menu.  Additional sessions
can be added to /etc/gdm/Sessions/ (this can be changed in gdm.conf).

[This information is for gdm 2.4 in sarge/sid.  It may be slightly
different for gdm 2.2 in woody.]
