You have to use update-alternatives as root :

# update-alternatives --config x-window-manager

This is one of the stupidest part of the gnome2 transition, since
upstream gnome2 people think you should not change window manager
anymore, or are to stupid to understand what a window manager is, or
would be afraid of the possibility of changing a window manager. Well,
clearly they have only the corporate tech support in mind, bit what can
we do about it ?

This has been discussed on this mailing list before, and a
solution is well underway (at least that was the impresion i had, read
the mailing list archive to convince yourself).
