First of all have a look at the "IPChains" and "Linux IP Masquerade mini" HOWTOs.
Here's what you want with ipchains (I suppose you have your interfaces ifconfig'ed):
# Set default forwarding policy to DENY
ipchains -P forward DENY
# Masquerade the 192.168.1.0 network
ipchains -A forward -s 192.168.1.0/24 -j MASQ
But I really advice you to read the HOWTOs...
