Maybe it would work w/o preseeding build-client-opts and instead 
providing a configuration file /etc/ltsp/ltsp-build-client.conf with
this content:

EATMYDATA="true"

See 'man ltsp-build-client' and the scripts below of (ltsp-server) 
/usr/share/ltsp/plugins/Debian and /usr/share/ltsp/plugins/common
for details.
