you only need 1 Gbps in the link between the server and the switch. That's the real bottleneck. For the thin clients 100 Mbps is more than enough.

...and regarding power consumption, it is better to use 100Mbit only towards the server than Gbit on all ports. The 2xGbit + 24x100Mbit Netgear FS726T draws only 13W while the comparable 24xGbit GS724T draws 43W!

It might be that your 24xGbit switch is clever enough to consume less power if few of the ports are actually using Gbit, but you might also be interested in the less wear and tear of lower dimensioned swithces due to not having a fan. And the silence :-)
