Since dpkg already knows about the bits and endianness of ports,
perhaps it could add some sort of architecture wildcard system,
which would get resolved to real architectures at .dsc build time?

Alternatively the wildcards could be added to the .dsc too but that
would require sbuild, wb, dak and other tools to understand them too.

Until one of those happens, an unofficial Architecture-Tags field that
the Debian Janitor could use to update Architecture fields might work.
