Postfix is already in use at a variety of sites, both large and small.
It is used at home dial-up sites as well as various-sized organizations,
from small user groups to 60K+-subscriber mailing list systems.
All the FreeBSD mailing lists at freebsd.org are served by Postfix.

You nonetheless have a very valid point that it would be best to first
move Postfix to main, then let developers assess it for a while, before
possibly deciding to make it the default MTA.
