Hmm.... one scheme which comes to mind has one package for binaries,
another (very small) package for the "sendmail" interface, and a
third package (also very small) for the smtp listener.  The main
package could suggest the other two.

[Update-alternatives doesn't seem like a good fit because there's
no natural asymmetry to user needs.]

Note that in a few rare cases there might be a need for more than
one port 25 listener -- multi-homed hosts with unusual requirements,
mostly.  I'm not sure we'd want to address this case through the
package interface, but we wouldn't want to prevent it either.

It would be nice to be able to configure a mailer to be de-installed
in some future dpkg(/dselect/deity) run, after its queue has been
emptied.  Perhaps it's sufficient to have prerm fail until the queue
is empty.
