Won't work, at least not with the current system for dealing with
/usr/sbin/sendmail and the smtp: All packages which Provide:
mail-transport-agent conflict with mail-transport-agent.

Of course, something could be done with postinst-time prompts and
maybe update-alternatives, but that could easily become rather
complex and most people don't need that kind of complexity.

Anyways, no matter what solution is chosen it should be examined
carefully and tested thoroughly. I think we're going to have to go into
hamm with this "mail can get stalled in the queue when you switch mail
transport agents" thing on our known bugs list. [Perhaps with some
suggestions on how to recover manually.]
