I would like to add my 2 cents here:
I had the exactly the same afraids than you, Dale, about debmake, until I
started using it.
Yes, it hides part of the process of making a Debian package.
But it hides only the rutinary aspects of building a package.
Moreover, you may not expect debmake to do everything for you, but save
you some work. debmake is a set of tools. You may use only the ones that
really help you. For example, I started using only "debstd", and I saw it
saved me some work, because I was able to replace a bunch of cp's, gzip's
and "install -d"s by a single command line. On a newer package, I used
deb-make, and I saw again it saved me a lot of work. You may use it
gradually.
[ Moreover, there is something surprising about debstd: The fact that
it is a shell script, not a perl script :-]
