Looks like a bug in nouveau/mesa.

I'm not quite sure what you mean here; are you having trouble
installing addons (presumably "later installed karts" = additional
karts installed through stk's addon manager)? Try removing all addons
you've installed in ~/.local/share/supertuxkart/addons/ and restart
stk; you should be able to restart stk properly and have the changed
video settings stick. If the problem persists after re-installing
those addons you've just removed, it could be a problem with those
addons.
If you still think this is a bug, file a bug report.
