How to force building with a specific version of gcc

Hello
The mame package we have in Sid segfaults on some arches when built with
the default gcc (4.7)
gcc 4.7 support is planned in the next version of mame.

In the meantime I would like to force the package to build with gcc 4.6,
which is also available in sid.

Is it possible to specify such a thing in debian/control, so it is
picked automatically by the build infrastructure ?

Greets

Emmanuel
