My (non-expert) opinion: If you're not connected to the network and want a completely unattended installation, you'll have little (or no) means of designating the host name. Essentially, you'll need to configure the DHCP at some point, be it before or after you install the system. You'd be much better off working the bugs out of your dhcp server & network media, so that it's reliable.

An alternative, potential solution would be to write (borrow, have written, conjure) an automated network configuration script to be run on each client post installation that configures your network settings, but you'll still need to establish each machine's host name, either from the client, or by MAC address DHCP from the server, router, or firewall.
