Actually, the problem seems to lie with the CD image (or hardware, or the
kernel):

then a few lines later it tries to install cryptsetup...and hangs (most
probably due to read errors), the last few lines from "ps ax" are:

 7793 root 2400 R   apt-get -y --no-remove install cryptsetup
 7795 root 1424 S   /usr/lib/apt/methods/cdrom
 7931 root 352 S   nc -p 80 -l -e /usr/bin/httpd
 7964 root 520 R   ps awxxx

The last two processes are from the debugging, but process 7795 suggests
that apt is trying to get the package from the CD-ROM.

What is the result if you run the "Check the CD-ROM(s) integrity" command
from the d-i main menu?

Ok, but it seems that it tries the CD-ROM first (and fails) meaning it
never gets to that...
