Resizing LVM partitions is not supported. If you want to customize them, 
you need to go to the "configure LVM" at the top of the main partman menu 
option and make your changes there by deleting LVs and recreating them at 
the desired size. Then you probably will have to assign mountpoints 
again.

I agree that the user interface is not optimal for this. Undoubtedly it 
will be improved in the future, just as support for LVM has improved 
steadily between sarge and etch.
