I tried this again and can't reproduce it. Probably an error on my part - got 
lost between all the options in all my bootloaders :-( 
If I try it now, the new GRUB boots directly into my Unstable system 
(bypassing, as expected, the GRUB on that partition).

Sorry for the confusion.
