We can deal with that. gcc and pkgconfig already have to when building
cross-tools which have triplets in the name:
 pkg-config-x86-64-linux-gnu
 gcc-x86-64-linux-gnu
 binutils-x86-64-linux-gnu

A simple substitution suffices. It does add another little bit of
tiresome complication to the already horrible complicated rules files
for gcc.
