Kernel compiles or other big project compiles tend to be a great way to
use lots of cpu, memory and disk io. If the system is
multicore/multicpu, then building a kernel with -j 2*number_of_cores
tends to be a decent way to max out the cpu usage.A

Of course it is already known that p4 based xeon's will use more power
than any amd you can get. Future "Core" based xeons should be much
closer to the amd in power use. Of course both the "Core" xeons and the
opterons are available in low power versions which further reduce power
consuption. Staying away from 10k and 15k rpm drives also help reduce
power consumption, unless of course you happen to need very fast disk
access.
