Without I-Net just look outside the window every once in a while and
run 'date -s "12:00:00"' when the sun it at its peak.

When you do this, if you live in a location that has summer time, don't forget to either use "13:0:0" in summer or change the TZ environment variable to temporarily override the summer time correction. eg:

TZ=PST date -s 12:0:0
