There's an official answer to that on the Debian website. However, stable: Used for months by other people (few bad side effects).unstable: Has been successfully compiled at least twice, and has run without problems for at least one other person. The maintainer thinks it is ok, and would like to hear from you if you think otherwise.
testing: It has been available in unstable for a week, and nobody has complained so far. Of course, that doesn't mean it is necessarily any better than unstable - if nobody else used the package during that week.
