You could explicitely set the filesystem type for mount:

mount -o loop -t vfat ${FLASH_IMG} /mnt

Syslog error messages go to some files in /var/log by
default.

For testing I have created a partition table and a vfat
filesystem on my USB stick: No problem. But this was kernel
2.6.9.

Since 2.6.9 was released some days ago, you might want to
try the new kernel? (BTW, don't set CONFIG_BLK_DEV_UB,
which was introduced for 2.6.9.)
