Normally we produced some output for them like this:

(fake data to illustrate the point)

10 rooms from 1 January to 15 January
9 rooms from 2 January to 15 January
6 rooms from 2 January to 14 January
3 rooms from 2 January to 15 January
...
47 rooms from 8 January to 15 January
2 rooms from 10 January to 14 January

i.e. We don't have a fixed number of rooms for each week, but try to be
more efficient than that, while also trying to avoid people needing to
move rooms often, which happens if you blindly book the minimum number
of rooms for each night.

If the price is close to the smaller hotels' costs, then it's better to
avoid making people move.  If the price is very close then it's better
to put as many people as possible there -- but also, if anyone is
staying in each small hotel, make sure that there are not so few people
there that they feel victimised!
