You are almost there! You got a good-looking conosole, and
then it went bad again. I've seen that before.
Change this:
GRUB_GFXMODE=1366x768x32
GRUB_GFXPAYLOAD_LINUX=1366x768x32
To this:
GRUB_GFXMODE=1366x768x32
GRUB_GFXPAYLOAD_LINUX=1366x768x32
GRUB_GFXPAYLOAD_LINUX=keep
Run update-grub again, and see if that fixes it.
