  You were right. I'm reassigning the bug to xserver-xorg-core but it can
be a related package (xserver-xorg, xserver-xorg-video-nouveau and/or
xserver-xorg-video-intel)

  Yesderday, I took the time to use snapshot.debian.org to downgrade
my xorg packages (and only them, see the list below).
  Since, I do not have any problems with all my menus.

  Moreover, my system is way more stable. I had frequent Xorg hard bug
after coming back from suspend to ram: my graphical application were
still running (as shown by "ps") but I got the first virtual console.
And trying to switch to other console (and not only the one with the
X server) freezed the machine. This stability problems started at the
same time as the problem with menus.

  So, current version of xorg have important bugs when used in a
dual graphic cards (nouveau+intel) environment.

  About xorg logs, I do not have them any more in /var/log/X* or
/var/log/gdm3/*

My laptop was up-to-date wrt sid packages before the download.

Command line used to downgrade my sid system:
