I straced the Xorg process and found lines and lines of this:

  24745 tty8     Ss+    0:19 /usr/bin/X :0 -audit 0 -auth /var/lib/gdm/:0.Xauth -n

Isn't /usr/bin/X Xorg? why doesnt it die?
Killing that process and restarting gdm seems to work ok.
