The tapping and scrolling with the touchpad are not working since the
xserver and its related modules were updated (but it is still possible
to move the cursor or to use the mouse buttons.) Precision: It used to
work "out of the box" without any configuration from my side. (ie. no
change to /etc/X11/xorg.conf for example)

The following hack fixed the problem:

I installed xserver-xorg-input-synaptics version 1.1.2-1ubuntu5 from
the ubuntu repositories. Everything went back to normal immediately
after I restarted the xserver.
Just in case, I made a diff between the two Xorg.0.log (before and
after I restarted the xserver) Everything is quite identical, except
this part :

With xserver-xorg-input-synaptics version 1.1.2-1 (debian):

  * Tapping has been disabled by default on many touchpads by upstream, see
    the "NOTES" section in the synaptics(4) manpage for a short overview

    If you want to re-enable it, you can do so from within the X
