Did you notice that there is already an upstream ticket about packaging
for debian (https://github.com/restic/restic/issues/355) and even a
repository setup for that purpose
(https://github.com/restic/pkg-Debian)?

It looks like there is no activity since February in both locations, but
still it could be worthwhile to contact the people who already started
packaging for debian.

In the mentioned github issue, there were three people who offered to
sponsor an upload.
