Actually, ffmpeg has been uploaded 2 months ago and since then is waiting in the NEW queue [1]. Now it has to be accepted by the FTP Team, which apparently can take a lot of time for such a large package.

Nonetheless, all the objections to the state of ffmpeg in
Debian remain unaddressed.  This is, to me, egregious.
Even if ffmpeg is the only project to be so abused by Debian,
that by itself is sufficient to discredit the distribution
as a whole.  The value-add of all the members of the team
can be rendered useless for some installations by the
handling of even one important component.  Having begun with
release 1.0^H1 so long ago, I may have arrived at the point
of looking elsewhere for my primary GNU/Linux distro.

If you wait a little bit longer, you'll be able to install ffmpeg from the official Debian repository.
