Unfortunately, I do not know much about git-remote-cvs, and a quick
Google search of "git-remote-cvs" did not seem to turn up anything useful.

I must admit I have little experience in repository conversion. I was
considering the feasibility of converting webwml from CVS to Git (as
several developers suggested some years ago), and while playing with
cvs2git (in cvs2svn), came across ESR's crusade and his
cvs-fast-export (and later, reposurgeon) and thought it would be a
good idea to get them into Debian first, so that even if I fail to do
the webwml conversion myself, others who are more capable than I am
would find the tools useful for converting webwml or any other CVS
repositories they desire. :-)

I hope other people can help you with the git-remote-cvs question.
Indeed, it would be great to use git remotes with CVS repositories.

Cheers,

Anthony
