How would the user choose between oprofile and sysprof, how do they
differ?

Sysprof has a nice gtk interface. Moreover, the interface is quite simple and intuitive: you just have to press the Start then Profile buttons and you see the call tree. That said, oprofile seem to have more advanced options and is available on more archs.
