SAL_USE* is not set.

With this version of libreoffice you can choose between different so called "Visual Class Libraries" (VCL) ( https://github.com/LibreOffice/core/blob/master/vcl/README.md ). As far as I understand in order to use a VCL other than the standard, you have to install an additional package and set the environment variable SAL_USE_VCLPLUGIN. For example, to use the VCL named qt6 install libreoffice-qt6 (maybe it has a version number in its name on your system, try `apt list '~nlibreoffice.*qt6' --all-versions`) and to set SAL_USE_VCLPLUGIN=qt6 before starting libreoffice. There are other VCLs like gtk3, gkt4, or gnome etc.
Maybe you could try one of them.
