Please don't recommend any free PDF products--I've tried most, if not all, of them and they don't have what I need. Among other things, I haven't found any that make it easy to do real text redactions without destroying other text in the PDF.

It's a bit pricey, but I think it's worth it--it's certainly a lot cheaper than the Adobe equivalent.

Yeah. I've been using it since 2016. I am quite satisfied with it. I use it to edit text elements in documents and embedded forms that have been sent to me by students. I takes some getting used to, but it does the job for me. It is not really meant to redact or insert large pieces of text, but other than that I have been able to do all I wanted it to do. Mind you, it might be able to do large texts too, I just haven't ever had a need to explore that functionality. I just found it wasn't really efficient/comfortable when working with such larger pieces of prose.
