OK, in such case it is a thing what you want to have e.g.- Having a more or less finished OS with only minor thing to do, but also a lot of possibilities to configure and adjust on a GUI level
-> Go with KDE or Cinnamon- Starting with an ugly beginning and configure most things for the right look and feel by yourself. (Having "pain" and fun!!! ;-) ). Do a lot with the terminal.
-> Go with XFCEI think in the end the best advice to you might be test the several options with an Live-Stick-Version or in a VM (e.g. VirtualBox).
You have to find your own way and your own best suiting distro/flavour. This can be done only by trial and error.
