Jistsi users can run their own server within their security boundary.
Jitsi calls it Self-Hosting. See, for example,
<https://jitsi.github.io/handbook/docs/devops-guide/devops-guide-quickstart/>.

Follow these steps for a quick Jitsi-Meet installation on a
Debian-based GNU/Linux system. The following distributions are
supported out-of-the-box:
* Debian 10 (Buster) or newer
* Ubuntu 22.04 (Jammy Jellyfish) or newer (Ubuntu 18.04 or 20.04
can be used, but Prosody must be updated to version 0.11+ before
installation)
