Store the exclusions in an ARRAY, not in a string. Then create a
second array which contains the spelled-out --exclude=... options.
#!/bin/bash
exclusions=( '*.mp3' '*.mp4' '*.wav' )
exclude=( "${exclusions[@]/#/--exclude=}" )
source=...
destination=...
rsync -anuv "${exclude[@]}" "$source" "$destination"
