Agreed. The idea was to see the verbose context in which any
Grub-install error and warning messages would be discovered.

That's a salient point, not mentioned in your OP, which might indicate
an older machine, or else a more recent UEFI one that's running in
some compatibility mode. Do you switch the BIOS to boot from USB
after the stick is inserted each time.

I don't know where any installation logs would be stored in freebsd.

Yes, I would expect that OSes can deal with USB devices better than
the firmware that boots the machine, the latter having a reputation
for being buggy.

I don't know how one tells USB2 and USB3 sticks apart, but it seems
lkely that these double-ended sticks are USB3. How those behave when
plugged into the commoner USB2 sockets has been mentioned here in
other threads this month. I have a PC that will not boot from certain
sticks in particular sockets, and not at all from other sticks. It
won't even finish the POST when one particular stick is present. Yet
all these sticks can be used as normal when it's running.
