The log, do not just copy paste it, READ it. It is telling you what
happened: your mail was written in a folder (mailbox) named “echo
"whoami" > /tmp/test.txt”.
My crystal ball suggests the procmailrc you are using lacks the pipe at
the beginning of the line.
