Just tested this successfully. The disk is unencrypted.
1. On the linux line changed ro to rw and added init=/bin/bash to
the end of the line.
2. Pressed F10.
3. At the root prompt checked /etc for passwd, passwd-, shadow and
shadow-.
4. Executed 'passwd'.

Very perplexing and outside my experience.
