'stable' is currently and alias for 'buster' and 'testing' is for
'bullseye'. So if your /etc/apt/sources.list currently refers to
'testing' and you want to stick with bullseye when it's released then
change sources.list now, so it says 'bullseye' instead of 'testing'.

Don't change it to 'stable' because that's a 2 year old release and you
system wouldn't like that!

Once bullseye is released then the aliases will suddenly change, so
stable = bullseye and testing = bookworm.
