Using Bash you could use functions or aliases:
search_pkg() { aptitude search -F '%p %V' --disable-columns ${1}; }
$ search_pkg <pkg>
alias spkg="aptitude search -F '%p %V' --disable-columns"
$ spkg <pkg>
--
