As for the lack of EFI boot equipment in your script, see

  that was used when a Debian ISO image was packed up, and how to derive
  a command to replay this production."

The section
  "Determine those options which need to be adapted on amd64 or i386"
gives a script example similar to yours, but using the EFI equipment,
too.
