1) Don't associate UEFI/GPT or BIOS/FAT/MBR.
UEFI and BIOS/CSM/legacy are boot schemes.
GPT and MBR are partition schemes.
FAT is a just a filesystem type.

As far as Linux, GRUB and not-too-broken UEFI/BIOS firmwares are
concerned, you can mix either boot scheme with either partition scheme.
Don't know about Windows though.

2) Debian 7 "wheezy" amd64 can operate on any combination. Actually only
the bootloader (GRUB) cares about the boot scheme. The installed boot
scheme is the one used to boot the Debian installer. The amd64 Debian
installer supports either UEFI or legacy mode.

Yes. You need to install grub-efi-amd64 instead of grub-pc. But doing
this is not enough. See the Debian wiki page posted above for more details.

Probably not. At least not the Windows boot manager, which expects to be
loaded from UEFI.
